WThis is a home-style version of a drink found on the seasonal cocktail list. This is a party-sized pre-mixed which is loaded with the essence of the Christmas time, which makes it excellent for a holiday party. Reserve the remaining cordial for brunch beverages, puddings, or to mix another batch of the drink.
The Bikini Cocktail
Yields 10 guests
Ingredients for the Clementine Cordial (makes 750ml)
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Drink (produces 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach schnapps
200ml citrus syrup (as made above)
Fresh cranberries, as a garnish
Mandarin essential oil, for finishing
Method
For the Citrus Syrup: Put every ingredients into a pot, heat until it reaches a simmer, mixing to dissolve. Then, take off the stove and let it to cool down entirely. Transfer into a sterilised bottle, seal and refrigerate it in the fridge, it will last for up to a month.
For the Batch Mix: Pour the specified liquid ingredients into one sizeable container, allow it to infuse for one hour, then strain , ideally through muslin, so it's perfectly clear.
To serve: Measure 85ml of your premix to a stirring glass packed with ice, gently stirring gently for a minute to cool it down. Strain to a frosted cocktail glass or a similar vessel, garnish with some cranberries and complete it with a brief mist of the essential oil over the drink.
